Betty's Lemon Bars

For years, Betty Nudelman has been providing goodies to sell at musical benefit gatherings. Her Lemon Bars are invariably the favorite:


1/4 pound butter or margarine (1/2 cup)
1/4 cup confectioners sugar
1 cup flour
PRESS in bottom and sides of 9" x 9" pan.
BAKE at 350 for 15 minutes.

MIX & POUR into hot crust:
2 eggs
1 cup sugar
1/4 tsp salt
4 tbsp fresh lemon juice
1/2 tsp baking powder
2 heaping tbsp flour

BAKE for 30 minutes.

COOL, SPRINKLE with confectioners sugar. CUT into bars.
