Laurel's Honey Cake

This one is not too sweet, keeps well, and goes very well with sliced cheese and fruit. I often make one to take on a trip and we enjoy it as a snack for days.

LAUREL'S HONEY CAKE

Preheat oven to 350 degrees, and oil a 9" tube pan.
2 cups honey
1 cup oil
2 cups (1 can) pumpkin
4 eggs, beaten
3 cups flour (half white & half wheat is good)
1 Tbsp baking powder
2 tsp soda
2 tsp vanilla
1 tsp salt
1 cup nuts (optional)
1 cup raisins (we prefer golden)

Mix together dry ingredients. Mix together wet ingredients and combine with dry ingredients. Stir in nuts and raisins and pour into tube pan. Bake 1 hour and 25 minutes or until done.
