From The Swag, a rustic hewn-log lodge located on a breath-taking mountaintop clearing in Waynesville, North Carolina, comes this tempting recipe for granola cereal.


1-1/2 cups rolled oats
1/4 cup sesame seeds
1/2 cup sunflower seeds
1/2 cup shredded unsweetened coconut
1/2 cup wheat germ
1/4 cup bran
1/2 cup almonds
1/4 cup oil
1/4 cup honey
1/2 tsp vanilla extract
1/2 tsp almond extract raisins or other dried fruit, as desired.

Preheat oven to 300.

Tumble together oats, sesame seeds, sunflower seeds, coconut, wheat germ, bran and almonds in a big bowl. Heat oil and honey together in saucepan until thin and fairly hot. Remove from heat and stir in vanilla and almond extracts. Pour over dry ingredients and stir to coat evenly. Spread in single layers on jelly roll pans and toast in oven, stirring from time to time, until evenly browned.

Remove from oven and allow to cool thoroughly. Stir in raisins or other dried fruit. Serve 8 to 10. Recipe can be doubled and stored in tightly-covered containers.
